Split a document into multiple documents

Open a multi-page document, select the pages that you want to move into a new document, and tap Move.

Tap New document.

See your new multi-page document among your existing documents, you can now rename it.
Android

Open a multi-page document, long-press the pages that you want to move into a new document, and tap the Move button in the top-right corner.

Your new document with the previously selected pages appears on the screen, you can now rename it.
